Chettinad kara chutney

INGREDIENTS

  • 2 onion - medium size
  • 2 tomato - medium size
  • 8 garlic
  • 8 red chilli
  • 1 inch tamarind
  • 1 tbsp jaggery
  • 1 tsp hing/asafoetida
  • salt to taste
  • 1/2 cup water
  • 1/4 cup sesame oil

PROCEDURE

  • add onion, tomato, garlic, red chilli, tamarind, jaggery, hing, salt and salt in to the pressure cooker
  • pressure cook for 3-5 whistles
  • switch off the flame and release the pressure manually
  • cool the mixture completely before grinding
  • now add it into the mixer grinder
  • grind to a fine paste without adding water.
  • heat a sesame oil in the pan
  • add ground paste and mix well
  • cover and cook until the oil separates from the chutney
  • cool down completely
  • store in an airtight container
  • serve this lip smacking chutney with Idly and Dosa
  • delicious in taste
NOTES
  • adjust spice level according to your taste
  • highly recommend to use sesame oil for better taste
