Empty salna also called as plain salna, is a mouth watering south Indian curry which is easily goes with Dosa, Chapathi, Idiyappam, Parotta or Biryani. 

This finger licking plain salna is simply a tomato based curry using grated coconut but without using any vegetable or meat, which is usually served with parotta on the streets of Tamil Nadu.

Empty salna is quite popular across the streets and roadsides in Tamil Nadu. This recipe is very easy to prepare and it gets ready within 30 minutes. This salna is so flavorful and tastes great.

    RECIPE FOR PLAIN SALNA

INGREDIENTS

To dry roast

  • 8 red chilli
  • 2 tbsp coriander seed
  • 1 tbsp bengal gram dal
  • 1 tsp black pepper corn
  • 1 tsp cumin seeeds
  • 1/8 tsp fenugreek seeds
  • 1/2 tsp fennel seeds
  • 1 inch cinnamon stick
  • 3 cloves
  • 2 cardamom pods
  • 2 star anise
  • 2 black stone flower (kalpasi)
  • 1 bay leaf
For Onion Tomato Masala
  • 1 tbsp oil
  • 1 onion - roughly chopped
  • 2 green chilli
  • 5 garlic
  • 1 inch ginger
  • 1 tomato - roughly chopped
  • 1/4 cup grated coconut
For Salna
  • 1 tbsp oil
  • 2 spring curry leaves
  • ground onion tomato masala
  • ground dry roast masala powder
  • 1/4 tsp turmeric powder
  • salt to taste
  • 1.5 cup water
  • 1/4 cup coriander leaves - chopped

PROCEDURE

  • in a clean pan, add red chilli, coriander seeds, bengal gram dal, pepper corn, cumin seeds, fenugreek seeds, fennel seeds, cinnamon stick, cloves, cardamom pods, star anise, kalpasi and bay leaf
  • dry roast in low medium flame until nice aroma comes
  • add into the mixer grinder and grind to a fine powder
  • in the same pan, add oil, add roughly chopped onion, garlic, ginger and green chilli
  • saute for few minutes or until the onion becomes transparent
  • add chopped tomato and cook well till it turns mushy
  • add grated coconut
  • saute for 1 minute and then switch off the flame
  • cool down the mixture completely and transfer into mixer grinder
  • add 1/4 cup water and grind a smooth paste
  • heat oil in a broad pan
  • temper with fresh curry leaves
  • add ground onion tomato paste
  • saute for 1 minute
  • add turmeric powder, roasted spice masala powder and salt
  • mix well
  • add 1.5 cup water and mix well
  • bring this mixture to rolling boil in low medium flame
  • boil for 2 minutes
  • garnish with chopped coriander leaves
  • mix well and serve with parotta, biryani, dosa and chapathi
  • Delicious  😋 

NOTES

  • adjust spice level according to your taste
  • if you dont have fresh grated coconut, use dry coconut powder along with onion and tomato, saute well and grind to a paste
  • salna should be pouring consistency, adjust the water level according to that

Empty Salna with Step By Step Photo Recipe


in a pan, add the ingredients listed under "to dry roast"


dry roast in low medium flame until nice aroma comes


add into mixer grinder


grind to a fine powder


in the same pan, add a tbsp of oil, followed by roughly chopped onion, garlic, ginger and green chilli


saute well until transparent


add chopped tomato


cook well until it turns mushy


add grated coconut


saute for few minutes and then switch off the flame


cool down the mixture completely


add into mixer grinder


add 1/4 cup water and grind to a smooth paste


heat oil in a wide pan, temper with curry leaves


add ground masala paste and mix well


add salt, turmeric powder and ground spice powder


mix well and saute for 30 seconds


add 1.5 cup water and mix well


bring salna to boil for 1-2 minute


garnish with chopped coriander leaves


mix well and switch off the flame
