RECIPE FOR IDLI DOSA BATTER

INGREDIENTS
  • 2 cup idli rice
  • 3 cup par boiled rice
  • 1 cup urad dal
  • 1 tsp fenugreek seeds
  • salt as needed
  • water as needed to grind batter
PROCEDURE
  • in a mixing bowl, add parboiled rice and idli rice together
  • wash thoroughly in running water for 3-5 times
  • soak in water for overnight
  • in another mixing bowl, add urad dal
  • wash thoroughly in running water for 3-5 times
  • soak in water for overnight
  • add a tsp of fenugreek seeds in urad dal
  • in the next day morning, both rice and dal double in size
  • add soaked urad dal in wet grinder
  • grind to a light, smooth and fluffy batter, no need to add water too much. sprinkle water at regular intervals
  • transfer to a vessel
  • in the same wet grinder, add rice
  • grind to a slight coarse paste, by adding little water at regular intervals
  • transfer this rice batter to a urad dal batter
  • add salt
  • mix well
  • cover and ferment in warm area for 12-18 hours
  • after 12-18 hours, you can see the raised fermented batter
  • mix well
  • now grease the idli plate with little oil
  • pour one ladle full of batter in each hole
  • cover and cook for 10-15 minutes
  • remove idli from the pan
  • serve hot with any chutney or sambar
  • similarly, we can make dosa from this batter
  • for crispy dosa, use cast iron pan. take one ladle full of batter, pour it in the center of the pan and spread it in a circular motion. 
  • cook for 1-2 minutes
  • drizzle a tsp of oil around the dosa
  • after a minute, flip over to other side and cook evenly
  • serve with any chutney or sambar.
IDLI DOSA BATTER STEP-BY-STEP PHOTO RECIPE


Take 2 cup Idli Rice 


Take 3 cup Par Boiled Rice (puzhungalarisi)


mix altogether in one bowl (idli rice and parboiled rice)


Take 1 cup Urad Dal



wash in running water for 3-5 times and soak in water for overnight


wash urad dal in running water for 3-5 times and soak in water for overnight


add a tsp of fenugreek seeds in urad dal



after overnight, urad dal will look like this - urad dal double in size


after overnight rice will look like this 


in a wet grinder, add all the urad dal first


first grind without water


now sprinkle water at regular intervals


grind till the batter become light and fluffy


transfer to a big vessel 


add soaked rice in the wet grinder


grind rice by adding little water at regular intervals, no need to add too much water


grind till the batter become slight coarse in consistency


transfer this rice batter to the urad dal batter


add salt



mix well and close the vessel, keep it in warm place for fermentation for 12-18 hours

grease idli plate with a tsp of oil, pour one ladle full of batter, cover and cook for 10-15 minutes


Super Spongy Idli Ready

take one ladle full of batter in the center of the pan and spread it in a circular motion, drizzle a tsp of oil


once color changes, flip over to otherside of the pan and cook till done


Crispy Dosa Ready
