Here is a simple South Indian mutton curry recipe that can be made in a pressure cooker with freshly ground spices and coconut and it goes well perfectly with rice, chapathi, idli and dosa. RECIPE FOR MUTTON KUZHAMBU

INGREDIENTS

For the masala paste :
  • 1/2 cup fresh grated coconut
  • 2 tbsp poppy seeds
  • 14 small garlic
  • 2 inch ginger
  • 15 shallots (small onion)
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 2 tsp black pepper
  • 2 inch cinnamon stick
  • 3 cloves
  • 1 cup water
For the Curry :

  • 3 tbsp sesame oil
  • 1 bay leaf
  • 1 big onion - thinly sliced
  • 2 green chilli - slitted
  • 1 spring curry leaves
  • 1 tomato
  • 1/2 tsp turmeric powder
  • 2 tsp red chilli powder
  • 500 g mutton
  • salt as needed
  • 2 cup water

PROCEDURE
  • clean mutton, chop in to pieces and mix with a tsp of turmeric powder and keep it aside
  • in a mixer grinder, add grated coconut, poppy seeds, garlic, ginger, shallots, cumin seeds, black pepper, cloves and cinnamon stick
  • add 1 cup water, grind to a smooth paste and keep it aside
  • heat oil in a pressure cooker pan
  • add bay leaf and saute for few seconds
  • add thinly sliced onion, slitted green chilli, curry leaves and saute till the onion turn soft and translucent
  • add chopped tomato and saute well
  • add turmeric powder and red chilli powder
  • mix well
  • add ground masala paste and combine well with all the seasonings
  • add cleaned mutton pieces and mix well
  • cover and cook in medium flame for 10 minutes
  • add 2 cup water and salt
  • mix well
  • pressure cook the curry for 5 - 7 whistle or slow cook for 1 hour (slow cook brings more flavor to the curry)
  • serve with hot plain rice or chapathi 
  • taste good

Mutton Kuzhambu with Step-By-Step Photo Recipe


in a mixer grinder, add grated coconut


add poppy seeds


add garlic


add ginger


add shallots


add cumin seeds


add black pepper


add cloves and cinnamon stick


first, grind to a coarse paste


add 1 cup water


grind to a smooth paste


heat oil in a pressure cooker pan


add bay leaf and saute for few seconds


add thinly sliced onion, slitted green chilli and curry leaves


saute until onion turn translucent


add chopped tomato 

saute well till it turn mushy


add turmeric powder and red chilli powder


add ground masala paste


combine well with all the seasonings


add cleaned mutton pieces


mix well


cover and cook in medium flame for 10 minutes


add 2 cup water


add salt


pressure cook for 5-7 whistles or slow cook for 1 hour or until mutton pieces turn soft


mutton curry turns delicious

mutton kuzhambu

serve hot with plain rice or chapathi
