In Gujarat, Jalebi is often paired with Fafda, whereas in other regions it is served with Rabri. It is mostly prepared on festivals like Diwali and Holi, though you can make it as per mood and cravings. It is also a delightful evening snack, when paired with samosas and hot masala tea.

What actually makes this dessert delicious is the crispiness filled with sugary taste, no wonder this delicacy tastes best when paired with spicy side dish or after an elaborate meal. To make this jalebi even better add some soaked saffron water to the batter this gives a beautiful yellow tint to this recipe and the aroma of saffron makes it more delightful. It is always advisable to prepare jalebi by shallow frying, and if you are someone who loves the aroma and taste of ghee, then you can use ghee instead of using refined oil. INGREDIENTS:


For Sugar Syrup: 
  • 1/4 cup Water
  • 1 cup Sugar
  • 1/4 tsp Saffron strands
  • 1/4 tsp cardamom powder
To Fry Jalebi:
  • Oil for Deep fry
  • 1 tbsp ghee
For Jalebi Batter:
  • 1/2 cup All purpose flour
  • 1 tsp corn flour
  • 1 tsp yogurt/curd
  • 1/8 tsp yellow food color
  • 1/4 tsp baking soda
  • 1/2 tsp lemon juice
  • water as needed.

PROCEDURE:
  • In a pan, add 1/4 cup water and 1 cup sugar.
  • keep stirring on low flame, so that the sugar dissolves.
  • boil the sugar syrup and add saffron.
  • cook until you get one string consistency in the sugar syrup.
  • when one string consistency reached. switch off the flame and add cardamom powder.
  • In a mixing bowl, add all purpose flour, corn flour, yogurt/curd and yellow food color.
  • add water.
  • mix well or till you get a flowing consistency.
  • add lemon juice.
  • add baking soda and give a gentle mix.
  • now transfer this batter in to tomato ketchup bottles carefully.
  • heat oil in a pan and add 1 tbsp of ghee.
  • squeeze the bottle and make round spirals with the batter.
  • when one side is partly cooked, turn over and fry the other side.
  • fry jalebi till they are light golden color.
  • Then immediately drop the fried jalebi in the warm sugar syrup for 20 seconds.
  • Serve jalebi in hot or warm or at room temperature.


Note: lemon helps to avoid crystallizing sugar syrup and keeps your jalebi's crispy. While making this video, i forgot to add lemon in sugar syrup. so please add lemon in it.
