Omapodi or plain sev also known as sev. Omapodi is a delicious and crispy south Indian snack of sev laced with the aroma and flavor of ajwain seeds. Sev is a crispy snack usually made of bengal gram flour and idiyappam flour or rice flour for an extra crisp texture. It is eaten as it as a Evening snack or topped over chaat. RECIPE FOR OMAPODI | PLAIN SEV

INGREDIENTS
  • 1/2 cup ajwain | omam
  • 1 cup bengal gram flour
  • 1/2 cup idiyappam flour
  • 1 tbsp unsalted butter (room temperature)
  • 3 tbsp water
  • 1 tsp hot oil
  • salt as needed
  • oil for deep fry
PROCEDURE
  • In a frying pan, add ajwain seeds
  • dry roast ajwain in a low flame for 1-2 minutes till nice aroma comes
  • transfer in to pestle and mortar or in a mixer grinder
  • grind to a fine powder
  • add 3 tbsp water and set aside
  • now filter using strainer
  • Ajwain/omam water ready now. keep it aside.
  • in a mixing bowl
  • add bengal gram flour, idiyappam flour, unsalted butter, salt, hot oil and ajwain water
  • mix well
  • add water little by little to form a sticky dough
  • heat oil in a frying pan
  • grease little oil in idiyappam maker
  • add some dough and fill the idiyappam maker
  • press it in the preheated oil 
  • cook till the bubbles ceases (cooking time is less than a minute)
  • drain in paper towel and repeat the rest of the dough
  • cool down completely
  • store in an air tight container
  • Enjoy with your family and kids
