Lady's finger also known as okra . Okra is known as Vendakkai in Tamil, Bhindi in Hindi and Bendakaya in Telugu. Lady's finger or Okra is one of the highly nutritious low calorie vegetable that is often used to prepare sambar, curry or stir fry in Indian Cuisine. Here is how to do it.

INGREDIENTS
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp cumin seed
  • a pinch hing / asafoetida
  • few curry leaves
  • 400 gm lady's finger /Okra
  • pinch of turmeric powder
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • salt as needed
  • 5 tsp peanuts
PROCEDURE
  • Wash lady's finger well, wipe it dry with a clean cloth. 
  • Then cut off the head and the tail.
  • Then cut it into small pieces. (not too small)
  • dry roast peanuts. (keep it aside)
  • Heat oil in a pan
  • add mustard seeds, allow to crackle
  • add urad dal, wait till change color
  • add cumin seeds and hing
  • add few curry leaves
  • saute well
  • now add chopped lady's finger
  • stir fry in low flame (don't cover the lid)
  • once half cooked, add salt
  • stir fry till it changes color and turns slightly crispy
  • add turmeric powder, chilli powder and coriander powder
  • add roasted peanuts
  • stir fry until masala coats with lady's finger
  • cover and cook
  • cook for 5 minutes or until raw smell goes off
  • stir occasionally
  • cook for another 2 minutes
  • ready to serve.
  • This curry can be served as a side dish for sambar rice, curd rice etc.,
Tips: Curd is added to prevent the lady's finger from becoming sticky.
