RECIPE FOR RASGULLA

INGREDIENTS

TO MAKE PANEER
  • 1 litre whole milk
  • 2 tbsp lemon juice
FOR SUGAR SYRUP
  • 1 cup sugar
  • 4 cup water
  • 1/4 tsp cardamom powder
  • few saffron strand (optional)
PROCEDURE
  • In a sauce pan, add whole milk
  • allow to boil 
  • cook for 5-7 minutes in medium flame
  • stir occasionally
  • add lemon juice 
  • milk starts curdle
  • stir well until milk curdles completely
  • drain the curdled milk into the handkerchief or muslin cloth
  • squeeze and drain the water completely
  • add a cup of water and clean the paneer twice
  • now squeeze off excess water
  • hang for 1 hour or until all the water drains off completely
  • now paneer ready
  • start to knead paneer till it turns out soft and smooth.
  • make small balls of paneer and keep aside (check no cracks) if cracks, rasgulla will broke
  • let's prepare sugar syrup
  • in a heavy bottom pan, add 1 cup sugar and 4 cup water
  • mix well until sugar dissolves
  • add cardamom powder
  • allow sugar syrup to boil
  • now drop paneer balls into sugar syrup
  • cover with lid
  • allow to cook for 10-15 minutes
  • after 15 minutes, paneer balls or rasgulla doubled in size. It should be soft, spongy, light and juicy.
  • remove carefully from the stove top
  • cool completely at room temperature
  • after keep refrigerate
  • serve rasgulla chill and garnish with few saffron strands
  • Enjoy with your family and friends during festive season.
